Denomination of Origen: CAVA (Sant Sadurní d'Anoia - CATALONIA-SPAIN) Denomination of Origen is a special designation used to indicate which regions the Wines of Cavas come from. These regions each are specific, prestigious wine making areas, and share a level of quality and certain characteristics of the designated region. Cava, Spanish sparkling wines prepared in the French Champagne tradition, come exclusively from the area around Sant Sadurní d'Anoia in Catalonia, and include varietals that are only grown in this region.
Grape Varietals: Xarel·lo, Chardonnay.
Aging in the bottle: 30 months.
Alcohol: 11'5%
Bottle: 0.75cl. Special format.
Optimal Period for Consumition: Within 18 months from purchase date.
Serving Temperature: 7-8ºC
Degorage: Traditiopnal Method.
Degorge completed no more than 3-4 weeks before sale to consumer.
Remuage done according to the traditional method, during 3 weeks. This CAVA is distinguished by the barrel-aged Chardonnay wine that is included as part of the varietals.
Comments on tasting: Sparkling golden color. Very fine and persistent bubble, with an excellent performance in the glass. Smell of toasted yeast, moderate red cherry, reminiscent of allspice. Lightly effervescent subtleties of these same flavors (toasted yeast, red cherry, bay leaf) Balanced Flavors with a light acidity, that evolves nicely. Month finish, long and very pleasant.
Special notes: On the label the limited addition number is hand written. The aging time is also clearly indicated. The degorage date is clearly market.
